Ingredients

  • – 2 lbs (900 g) Salmon Filet
  • – 2 tbsp (30 ml) Mayonnaise
  • – 1 tsp (5 ml) Onion Powder
  • – 1 tsp (5 ml) Garlic Powder
  • – 1 tsp (5 ml) Chili Powder
  • – 2 tsp (10 ml) Garlic Paste
  • – Garlic Salt and Pepper, (as desired)
  • – 3/4 cup (180 ml) Mayonnaise
  • – 1/2 cup (120 ml) Thai Sweet Chili Sauce
  • – 1 tbsp (15 ml) Sriracha
  • – 1 tbsp (15 ml) Soy Sauce
  • – 1 tsp (5 ml) Honey
  • – 1 clove Garlic, (grated or minced)


Instructions

  1. Set your oven to 450 degrees F to preheat.
  2. Begin by drying the salmon and removing its skin. If your salmon was frozen, ensure it’s fully thawed before skinning. Use a sharp knife to slice between the skin and the meat, holding the skin firm with one hand while sliding the knife along it with the other. The skin should come off easily; trim any remaining bits if necessary.
  3. Slice the salmon into pieces about 1-1.5 inches in size and transfer them to a large bowl.
  4. Combine mayonnaise, onion powder, garlic powder, chili powder, and garlic paste in a small bowl. Mix well, then sprinkle the salmon pieces with garlic salt and pepper to taste.
  5. Pour the mayo mixture over the salmon chunks, ensuring each piece is well-covered. Arrange the seasoned salmon on a baking sheet in a single layer, leaving 1-2 inches between each piece for even cooking and crispiness.
  6. Bake the salmon in the preheated oven for 10 minutes, then switch to broil for an additional 2-3 minutes until they achieve a golden-brown color. Be attentive during broiling, as the salmon can burn quickly.
  7. Meanwhile, prepare the bang bang sauce by whisking together the remaining ingredients. Once the salmon is done, drizzle the sauce generously over the pieces.
