Ingredients
- 1 cup rolled oats (90g)
- 1/2 cup creamy peanut butter (120g)
- 1/2 cup ripe mashed banana (about 1 large banana or 120g)
- 1/4 cup honey (85g)
- 1/4 teaspoon vanilla extract (1.25ml)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon ground cinnamon (0.5g)
- 1/4 cup mini chocolate chips (45g)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, combine the mashed banana and peanut butter.
- Add honey and vanilla extract to the banana-peanut butter mixture.
- Stir in the rolled oats, salt, and ground cinnamon until well combined.
- Fold in the mini chocolate chips.
- Transfer the mixture to the prepared baking pan.
- Spread the mixture evenly in the pan using a spatula.
- Bake for 20 to 25 minutes, or until the edges are golden brown.
- Remove from the oven and let the bars cool completely in the pan.
- Once cooled, lift the parchment paper to remove the bars from the pan.
- Cut into squares or bars for serving.
