Ingredients

  • 1 cup rolled oats (90g)
  • 1/2 cup creamy peanut butter (120g)
  • 1/2 cup ripe mashed banana (about 1 large banana or 120g)
  • 1/4 cup honey (85g)
  • 1/4 teaspoon vanilla extract (1.25ml)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 teaspoon ground cinnamon (0.5g)
  • 1/4 cup mini chocolate chips (45g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper.
  3. In a large mixing bowl, combine the mashed banana and peanut butter.
  4. Add honey and vanilla extract to the banana-peanut butter mixture.
  5. Stir in the rolled oats, salt, and ground cinnamon until well combined.
  6. Fold in the mini chocolate chips.
  7. Transfer the mixture to the prepared baking pan.
  8. Spread the mixture evenly in the pan using a spatula.
  9. Bake for 20 to 25 minutes, or until the edges are golden brown.
  10. Remove from the oven and let the bars cool completely in the pan.
  11. Once cooled, lift the parchment paper to remove the bars from the pan.
  12. Cut into squares or bars for serving.
  13. Store leftovers in an airtight container at room temperature.

Notes

  • For a richer flavor, consider using crunchy peanut butter instead of creamy.
  • Enhance the texture by adding extra mix-ins like dried fruit or chopped nuts.
  • Opt for ripe bananas to achieve a sweeter taste and smoother consistency in the bars.
