Delightful banana bread muffins made with ripe bananas, offering a comforting taste of home.
Ingredients
- 2 very ripe bananas, mashed well with a fork
- 1/3 cup melted butter, slightly cooled
- 1/2 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 pinch of salt
- 1 1/2 cups all-purpose flour, spooned and leveled
- Optional mix-ins: chocolate chips, chopped walnuts, or a sprinkle of cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- Stir the mashed ripe bananas with the slightly cooled melted butter until combined.
- Add the sugar, beaten egg, and vanilla extract; mix until just combined.
- Sprinkle baking soda and salt over the mixture.
- Fold in the all-purpose flour until no streaks remain.
- Scoop the batter into prepared muffin cups, filling them about three-quarters full.
- Bake for 20-25 minutes, or until the tops turn golden, and a toothpick inserted comes out clean.
- Let cool for five minutes in the pan before transferring to a wire rack.
