Description

Ingredients

  • 2 very ripe bananas, mashed well with a fork
  • 1/3 cup melted butter, slightly cooled
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • Optional mix-ins: chocolate chips, chopped walnuts, or a sprinkle of cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. Stir the mashed ripe bananas with the slightly cooled melted butter until combined.
  3. Add the sugar, beaten egg, and vanilla extract; mix until just combined.
  4. Sprinkle baking soda and salt over the mixture.
  5. Fold in the all-purpose flour until no streaks remain.
  6. Scoop the batter into prepared muffin cups, filling them about three-quarters full.
  7. Bake for 20-25 minutes, or until the tops turn golden, and a toothpick inserted comes out clean.
  8. Let cool for five minutes in the pan before transferring to a wire rack.
