Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1 kg)
  • 1 pound (450 g) cremini or button mushrooms, halved
  • 2 tablespoons (30 ml) vegetable oil
  • 3 tablespoons (45 ml) balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon dried rosemary (1 g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon honey (15 ml)
  • 1 tablespoon soy sauce (15 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Season the chicken thighs with salt and black pepper on both sides.
  4. In a small bowl, mix balsamic vinegar, olive oil, honey, soy sauce, minced garlic, thyme, and rosemary.
  5. Place the chicken thighs in a large baking dish, skin side up.
  6. Pour half of the balsamic mixture over the chicken thighs, ensuring they are well coated.
  7. Add the halved mushrooms to the baking dish around the chicken thighs.
  8. Drizzle the remaining balsamic mixture over the mushrooms.
  9. Gently toss the mushrooms to coat them in the balsamic mixture.
  10. Roast in the preheated oven for 35-40 minutes or until the chicken is cooked through and skin is crispy.
  11. Baste the chicken and mushrooms with the pan juices halfway through cooking.
  12. Check that the chicken’s internal temperature reaches 165°F (74°C).
  13. Remove the baking dish from the oven and let it rest for a few minutes.
  14. Serve the balsamic roasted chicken thighs and mushrooms warm.
