Ingredients
- 4 bone-in, skin-on chicken thighs (about 1 kg)
- 1 pound (450 g) cremini or button mushrooms, halved
- 2 tablespoons (30 ml) vegetable oil
- 3 tablespoons (45 ml) balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (1 g)
- 1 teaspoon dried rosemary (1 g)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon honey (15 ml)
- 1 tablespoon soy sauce (15 ml)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- Season the chicken thighs with salt and black pepper on both sides.
- In a small bowl, mix balsamic vinegar, olive oil, honey, soy sauce, minced garlic, thyme, and rosemary.
- Place the chicken thighs in a large baking dish, skin side up.
- Pour half of the balsamic mixture over the chicken thighs, ensuring they are well coated.
- Add the halved mushrooms to the baking dish around the chicken thighs.
- Drizzle the remaining balsamic mixture over the mushrooms.
- Gently toss the mushrooms to coat them in the balsamic mixture.
- Roast in the preheated oven for 35-40 minutes or until the chicken is cooked through and skin is crispy.
- Baste the chicken and mushrooms with the pan juices halfway through cooking.
- Check that the chicken’s internal temperature reaches 165°F (74°C).
- Remove the baking dish from the oven and let it rest for a few minutes.
- Serve the balsamic roasted chicken thighs and mushrooms warm.
