Ingredients

  • 4 eggs
  • 1 long baguette thickly sliced, Note 1
  • 1 onion red or white, or 4 green onions
  • 2 tomatoes ripe and sweet
  • 8 radishes
  • 1 garden cucumber or 1/2 English cucumber
  • 2 sweet green peppers or 1 large bell pepper red, orange or yellow
  • 20 black olives
  • 8 slices of feta cheese or kashkaval, Note 2
  • 10 slices beef salami
  • 2 beef sausages about 9 oz/ 200 g
  • 1 teaspoon (5 ml) oil
  • 1 small bowl of ajvar or zacusca optional , Note 3
  • A few sprigs of parsley optional
  • Fine sea salt


Instructions

  1. Serve: Arrange a few slices of the baguette with feta cheese, a couple of pieces of salami, some onion, a slice of tomato, or several slices of cucumber.
  2. Eggs: Boil the eggs. For semi-soft centers, cook for approximately 6–7 minutes. For fully-cooked eggs, simmer for 9–10 minutes. You can also fry, poach, scramble, or make omelets. As the eggs cook, get the other ingredients ready.
  3. Bread: Slice the baguette into thick pieces.
  4. Vegetables: Chop the onion, tomatoes, and radishes into small wedges. Slice the cucumbers and pepper. Put the olives in a small dish.
  5. Cheese: Cut the feta or kashkaval into thick pieces.
  6. Sausages: Slice the salami into thick pieces. Cut the beef sausages into large chunks. Make two small cuts at each end, in an X shape, so they curl up and form a flower shape when cooked.
  7. Cook sausages: Warm the oil in a pan and fry the sausages for 3–5 minutes, turning regularly, until they are lightly crispy and warmed through.
  8. Dip: Place the ajvar or zacusca into a small dish.
  9. Put the small dishes with dip and olives on the board. Alternatively, scatter the olives on the board at the end to fill any empty spaces.
  10. Position the thick bread slices in one corner or spread them out slightly. Place the cheese nearby. Peel and cut the boiled eggs in half and position them next to the cheese.
  11. Arrange the salami and sausages in small piles or slices.
  12. Group the fresh vegetables around the board. If desired, add a few parsley leaves.
  13. Salt: Include a small dish of fine sea salt on the table.
