Ingredients
- 2 medium zucchini, about 1 pound (450g)
- 1 ½ tablespoons olive oil (22ml)
- 1/3 cup (28g) grated vegetarian rennet cheese, 1 ounce (28g)
- 1/3 cup (38g) panko breadcrumbs or homemade breadcrumbs (38g)
- 1/4 cup (15g) packed fresh basil leaves, finely chopped (15g)
- 1/4 teaspoon garlic powder (1.25ml)
- 1/8 teaspoon fine sea salt (0.6ml)
- 1/8 teaspoon ground white pepper (0.6ml)
Instructions
- Set your oven to 425°F (218°C) and prepare a baking tray by covering it with parchment paper.
- Cut the zucchini into slices, each about 1/4-inch thick, and mix them with olive oil until they are evenly covered.
- In a shallow dish, combine the grated cheese, breadcrumbs, chopped basil, garlic powder, salt, and pepper.
- Press each zucchini slice into the cheese mixture, ensuring both sides are well-coated.
