Ingredients

  • 1 1/2 lbs zucchini (680 g)
  • 2 cups cherry tomatoes (300 g)
  • 1 cup breadcrumbs (120 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 1 cup shredded mozzarella cheese (110 g)
  • 2 tablespoon s olive oil (30 ml)
  • 2 garlic cloves, minced
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the zucchini into thin rounds.
  3. Halve the cherry tomatoes.
  4. In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, oregano, and basil.
  5. Add salt and pepper to the breadcrumb mixture and mix well.
  6. Drizzle olive oil over the sliced zucchini and cherry tomatoes.
  7. Season the zucchini and tomatoes with salt and pepper to taste.
  8. Layer the zucchini and tomatoes in a baking dish, alternating between the two.
  9. Sprinkle half of the breadcrumb mixture evenly over the layered vegetables.
  10. Top with shredded mozzarella cheese.
  11. Add the remaining breadcrumb mixture over the mozzarella cheese.
  12. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  13. Remove from the oven and let it cool for a few minutes before serving.
