Ingredients
- 2 medium zucchinis (about 300g)
- 1 cup shredded mozzarella cheese (about 100g)
- 1/2 cup grated Parmesan cheese (about 50g)
- 1/2 cup breadcrumbs (about 60g)
- 2 tablespoons olive oil (about 30ml)
- 1 teaspoon garlic powder (about 5g)
- 1 teaspoon dried Italian herbs (about 5g)
- 1/2 teaspoon salt (about 2.5g)
- 1/4 teaspoon black pepper (about 1g)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the zucchinis into 1/4-inch thick rounds.
- In a bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian herbs, salt, and black pepper.
- Dip each zucchini slice in olive oil, ensuring both sides are coated.
- Press each oiled zucchini slice into the breadcrumb mixture, coating both sides.
- Arrange the coated zucchini slices on a baking sheet in a single layer.
- Sprinkle the shredded mozzarella cheese evenly over the zucchini slices.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
- Remove from the oven and let cool slightly before serving.
