Ingredients

  • 1 cup (240 ml) mashed sweet potato, from about 1 large sweet potato
  • 1 cup (240 ml) grated zucchini, packed, from about 1 medium zucchini
  • 1/4 cup (60 ml) parmesan cheese
  • 1/4 cup (60 ml) plain Panko breadcrumbs
  • 1/2 tsp (3 ml) onion powder
  • 1/4 tsp (1 ml) salt, optional


Instructions

  1. Warm up your oven to 400 degrees Fahrenheit (204 degrees Celsius) and prepare a baking tray by covering it with parchment paper.
  2. Poke holes in the sweet potato using a fork and microwave it for 6-7 minutes until it becomes soft. Scoop out the flesh and measure out 1 cup of the mashed sweet potato.
  3. Grate the zucchini using the smallest holes on a box grater for a finer texture, or larger ones if you prefer bigger pieces. Aim for about 1 cup of tightly packed grated zucchini.
  4. Remove as much water as possible from the zucchini using your hands, a towel, or cheesecloth, which should leave you with approximately 1/2 cup of grated zucchini.
  5. In a bowl, combine the zucchini, mashed sweet potato, breadcrumbs, cheese, onion powder, and optional salt, mixing thoroughly until everything is evenly incorporated.
  6. Take tablespoon-sized amounts of the mixture and shape them into small tot forms, arranging them on the parchment-lined baking sheet.
  7. Cook in the oven at 400 degrees Fahrenheit for roughly 15-18 minutes, or until the edges are slightly browned. Allow them to cool completely before enjoying.
