Ingredients

  • Cooking spray
  • 25 cup (60 ml) cornstarch
  • 4 large egg whites, lightly beaten
  • 1 cup (240 ml) panko (Japanese-style breadcrumbs)
  • 75 ounce (21 g) Parmesan cheese, finely grated
  • 5 teaspoon (8 ml) s dried oregano
  • 12 ounce (340 g) s spiralized zucchini noodles
  • 25 teaspoon (1 ml) salt
  • 25 cup (60 ml) light ranch dressing
  • 25 cup (60 ml) lower-sodium marinara sauce


Instructions

  1. Heat the oven to 425 degrees F. Cover two baking trays with parchment paper and spray them lightly with cooking spray.
  2. Put cornstarch in one shallow bowl. In another shallow bowl, whisk the egg whites. In a third shallow bowl, mix together the panko, Parmesan, and oregano.
  3. Cut the spiralized zucchini into pieces about 5 or 6 inches long.
  4. In batches, coat the zucchini pieces in cornstarch, shaking off the extra. Then dip them in the egg whites, letting any excess drip off.
  5. Finally, coat them in the panko mixture, again shaking off any extra. Lay the coated zucchini pieces on the prepared baking sheets, ensuring they are spaced apart. Lightly spray them with cooking spray.
  6. Bake for 10 to 12 minutes until they are golden and crispy. Once done, take them out of the oven and sprinkle with salt.
  7. Mix the ranch dressing and marinara sauce together in a small bowl, and serve it with the fries.
