Description

Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh blueberries
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Toppings of your choice (e.g., nuts, more blueberries, yogurt)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine cottage cheese, blueberries, rolled oats, honey, eggs, vanilla extract, baking powder, and salt in a blender. Blend until smooth.
  3. Pour the mixture into individual baking bowls or a greased baking dish.
  4. Bake for 25-30 minutes or until set and slightly golden on top.

Notes

If using frozen blueberries, thaw and remove excess liquid before adding to the mix.
