A delicious and satisfying breakfast burrito filled with creamy scrambled eggs, crispy bacon, and melty cheddar cheese, perfect for any morning.
Ingredients
- 2 tablespoons butter
- 6 large eggs
- ½ teaspoon garlic powder
- â…› teaspoon cayenne pepper
- Sea salt and black pepper, to taste
- 4 large flour tortillas, warmed
- 2 cups roasted or pan-fried potatoes
- 1 cup grated cheddar cheese
- 1 cup cooked breakfast sausage, cut into pieces
- 5 slices bacon, cooked and sliced
- Sour cream, for serving
- Salsa, for serving
Instructions
- Melt the butter in a skillet over medium heat.
- Add the whisked eggs, garlic powder, cayenne, sea salt, and black pepper. Cook until eggs are fully set while maintaining a creamy consistency.
- Lay each warmed tortilla flat on a surface.
- Add ½ cup scrambled eggs to the center of each tortilla.
- Top with ½ cup of roasted or pan-fried potatoes.
- Sprinkle ¼ cup of grated cheddar cheese and ¼ cup of either bacon or breakfast sausage.
- Roll the tortilla tightly into a burrito shape.
- Cook each burrito in a skillet with a small amount of butter or oil until golden on both sides, or bake at 350°F (175°C) for 10 minutes.
- Serve with sour cream and salsa on the side.
Notes
For extra flavor, consider adding bell peppers or onions to the filling. Leftovers can be stored in the refrigerator for up to three days.
