Ingredients

- 1/8 teaspoon (1 ml) black pepper (0.5 grams)
- 1/4 cup (60 ml) cherry tomatoes, halved (40 grams)
- 1/4 cup (60 ml) diced red onion (40 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (10 grams)
- 1/4 cup (60 ml) shredded cheddar cheese (28 grams)
- 1/2 lime, juiced
Instructions
- Crack the eggs into a bowl.
- Add milk to the eggs.
- Whisk the eggs and milk until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet.
- Stir gently with a spatula until eggs are softly scrambled.
- Season the scrambled eggs with salt and black pepper.
- Transfer scrambled eggs to a serving bowl.
- Halve and pit the avocado, then scoop out the flesh.
- Dice the avocado and add it to the bowl with the eggs.
- Add halved cherry tomatoes to the bowl.
