Ingredients

  • 2 large eggs
  • 1 tablespoon milk (15 ml)
  • 1 ripe avocado
  • 1 tablespoon olive oil (15 ml)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1/8 teaspoon (1 ml) black pepper (0.5 grams)
  • 1/4 cup (60 ml) cherry tomatoes, halved (40 grams)
  • 1/4 cup (60 ml) diced red onion (40 grams)
  • 1/4 cup (60 ml) chopped fresh cilantro (10 grams)
  • 1/4 cup (60 ml) shredded cheddar cheese (28 grams)
  • 1/2 lime, juiced


Instructions

  1. Crack the eggs into a bowl.
  2. Add milk to the eggs.
  3. Whisk the eggs and milk until well combined.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Pour the egg mixture into the skillet.
  6. Stir gently with a spatula until eggs are softly scrambled.
  7. Season the scrambled eggs with salt and black pepper.
  8. Transfer scrambled eggs to a serving bowl.
  9. Halve and pit the avocado, then scoop out the flesh.
  10. Dice the avocado and add it to the bowl with the eggs.
  11. Add halved cherry tomatoes to the bowl.
  12. Add diced red onion to the bowl.
  13. Sprinkle chopped cilantro over the mixture.
  14. Top with shredded cheddar cheese.
  15. Drizzle lime juice over the bowl.
  16. Gently toss all ingredients to combine.
