Ingredients

  • 1/2 small red onion thinly sliced
  • 1 large English cucumber quartered lengthwise and sliced
  • 1 pint halved cherry tomatoes about 2 cup (480 ml) s
  • 2 medium avocados peeled, pitted, and diced
  • 1/3 cup (80 ml) crumbled feta cheese divided
  • 1/4 cup (60 ml) chopped fresh cilantro (or dill)
  • 3 tablespoon (45 ml) s fresh lime juice from about 2 small limes
  • 1 tablespoon (15 ml) extra-virgin olive oil
  • 2 teaspoon (10 ml) s honey
  • 2 cloves minced garlic (about 1 teaspoon (5 ml))
  • 1/2 teaspoon (3 ml) kosher salt
  • 1/2 teaspoon (3 ml) ground black pepper


Instructions

  1. Submerge the sliced red onion in a small bowl filled with cold water; this helps to mellow the sharpness.
  2. In a separate bowl or measuring cup, combine the ingredients for the dressing: lime juice, olive oil, honey, garlic, salt, and pepper, and whisk until well blended.
  3. In a large bowl, add the cucumber, tomatoes, avocado, half of the feta, and the cilantro. After draining the onion, incorporate it into the bowl. Drizzle the dressing over the salad, then gently mix everything together. Scatter the remaining feta on top. Serve right away or cover and refrigerate for up to four hours. Stir gently before serving.
