Description

A traditional Filipino dish that marries the flavors of soy sauce, vinegar, and spices for a comforting meal that brings people together.


Ingredients

  • 2 lbs chicken
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup water
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon sugar
  • Salt to taste
  • 2 tablespoons cooking oil


Instructions

  1. Combine chicken, soy sauce, garlic, and peppercorns in a bowl. Marinate for at least 30 minutes.
  2. Heat oil in a pot over medium heat. Add the marinated chicken (reserve the marinade) and brown on all sides.
  3. Add vinegar and let it boil without stirring for 2-3 minutes.
  4. Pour in the reserved marinade, water, bay leaves, and sugar. Stir and bring to a boil.
  5. Lower the heat and simmer for about 30-40 minutes, or until the chicken is tender.
  6. Season with salt to taste and serve hot over rice.

Notes

Use good quality soy sauce for optimal flavor and consider adding chili flakes for a hint of heat.
