Ingredients
- – 1/4 cup (60ml) maple syrup, brown sugar, or coconut sugar
- – 1/4 cup (60ml) coconut aminos, tamari, or soy sauce
- – 2 teaspoon (10ml) rice vinegar
- – 1 tablespoon (15ml) toasted sesame oil
- – 1/4 – 1/2 teaspoon (3 ml) red pepper flakes, optional
- – 2 teaspoon (10ml) arrowroot powder, or cornstarch
- – 1 tablespoon (15ml) olive oil
- – 1 lb (454g) ground beef
- – 2 cloves garlic, minced
- – 2 teaspoon (10ml) grated fresh ginger
- – 1 medium red bell pepper, finely diced
- – 1/2 cup (75g) shredded carrots
- – 4 whole green onions, sliced into 1″ (2.5cm) pieces
- – kosher salt, to taste
- – ground pepper, to taste
- – sesame seeds, to taste, for garnish
- – Boston Bibb lettuce
- – steamed white rice or sauteed cauliflower rice, optional, for serving
Instructions
- Prepare the sauce by mixing together maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes (if desired) in a measuring jug. Stir until everything is blended. Sprinkle in the arrowroot powder and continue stirring until smooth.
- In a 10-inch frying pan, warm the olive oil over medium-high heat until it starts to shimmer. Add the ground beef and use a wooden spoon to break it apart while cooking until it’s no longer pink, roughly 5 minutes.
- Introduce the garlic and ginger to the pan and keep stirring until their aroma is strong, about 1-2 minutes.
- Incorporate the diced bell pepper and shredded carrots, cooking until they are just tender, around 3-4 minutes.
- Drizzle the sauce over the contents of the skillet and mix well. Let it simmer until the sauce slightly thickens, approximately 2-3 minutes. Check the taste and season with salt and pepper if necessary.
- Mix in the sliced green onions.
- Fill the lettuce leaves with the beef mixture (you can add rice if you prefer) and sprinkle with sesame seeds for garnish. This will make 8 wraps without rice or 12 wraps with rice.
Notes
- Use Boston Bibb lettuce leaves as wraps for a lighter, low-carb option.
- Adjust spice level by adding more or less red pepper flakes to suit your taste.
- Before serving, taste and adjust seasoning with salt and pepper for perfect flavor balance.
