Description

A delightful and light mango cake bursting with tropical flavor, perfect for any celebration.


Ingredients

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 6 large eggs, separated
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup water
  • 2 ripe mangoes, peeled and diced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Sift together cake flour, baking powder, and salt in a bowl.
  3. Whisk the egg yolks, sugar, vegetable oil, vanilla extract, and water in another bowl until smooth, then gradually add the flour mixture.
  4. Beat the egg whites until stiff peaks form, then fold them gently into the batter.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Cool the cakes completely, then layer with diced mango between the cake layers.
  7. Beat the heavy cream with powdered sugar until peaks form.
  8. Frost the cake with the whipped cream and top with additional mango slices.
  9. Chill before serving.

Notes

Select ripe mangoes for enhanced flavor and consider adding a layer of mango puree for extra taste.
