Ingredients
- 1/2 cup (120 ml) uncooked Quinoa
- 1 Apple of choice, cored and diced
- 2 1/2 cups (590 ml) Water
- 2 teaspoons (10 ml) Maple Syrup or more to taste
- 1 teaspoon (5 ml) Cinnamon
- 1/3 cup (40 g) Walnut Halves, optional
- 1 teaspoon (5 ml) Raw Cacao Nibs, optional
Instructions
- Rinse the quinoa with hot water to eliminate any impurities and bitterness.
- Chop an apple of your choice into small pieces.
- In a small pot, combine the quinoa, half of the diced apple, and the water. Heat the mixture until it starts to boil, without covering, on medium-high heat. Lower the heat and let it gently cook for 15-20 minutes, stirring from time to time, until most of the water is absorbed. Take the pot off the heat.
- Mix in the maple syrup and cinnamon with the cooked quinoa.
- Distribute the quinoa into two bowls and garnish with the remaining fresh apple pieces, walnuts, and cacao nibs.
Notes
- Toast walnut halves in a dry skillet to enhance flavor and texture before mixing with quinoa.
- Substitute maple syrup with honey or agave syrup for a more decadent taste.
- Top with a spoonful of Greek yogurt or a sprinkle of coconut flakes for an extra indulgent touch.
