Ingredients

  • 1/2 cup (120 ml) uncooked Quinoa
  • 1 Apple of choice, cored and diced
  • 2 1/2 cups (590 ml) Water
  • 2 teaspoons (10 ml) Maple Syrup or more to taste
  • 1 teaspoon (5 ml) Cinnamon
  • 1/3 cup (40 g) Walnut Halves, optional
  • 1 teaspoon (5 ml) Raw Cacao Nibs, optional

Instructions

  1. Rinse the quinoa with hot water to eliminate any impurities and bitterness.
  2. Chop an apple of your choice into small pieces.
  3. In a small pot, combine the quinoa, half of the diced apple, and the water. Heat the mixture until it starts to boil, without covering, on medium-high heat. Lower the heat and let it gently cook for 15-20 minutes, stirring from time to time, until most of the water is absorbed. Take the pot off the heat.
  4. Mix in the maple syrup and cinnamon with the cooked quinoa.
  5. Distribute the quinoa into two bowls and garnish with the remaining fresh apple pieces, walnuts, and cacao nibs.

Notes

  • Toast walnut halves in a dry skillet to enhance flavor and texture before mixing with quinoa.
  • Substitute maple syrup with honey or agave syrup for a more decadent taste.
  • Top with a spoonful of Greek yogurt or a sprinkle of coconut flakes for an extra indulgent touch.
