Ingredients

  • 1 pound (454 g) boneless, skinless chicken breasts (about 450 grams)
  • 2 tablespoons (30 ml) olive oil (about 30 milliliters)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 large apples, cored and sliced
  • 1 cup (240 ml) chicken broth (about 240 milliliters)
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) ground cinnamon
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup (120 ml) chopped walnuts (about 65 grams)
  • 2 tablespoons (30 ml) honey (about 30 milliliters)
  • 1 tablespoon (15 ml) lemon juice (about 15 milliliters)


Instructions

  1. Slice the chicken breasts into thin strips.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the chicken strips to the skillet.
  4. Season the chicken with salt and black pepper.
  5. Cook the chicken until browned and cooked through, about 5-7 minutes.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, add the remaining tablespoon of olive oil.
  8. Add the sliced onion and minced garlic to the skillet.
  9. Sauté the onion and garlic until the onion is translucent, about 3-4 minutes.
  10. Add the sliced apples to the skillet with the onion and garlic.
  11. Cook the apples for about 3 minutes, stirring occasionally.
  12. Pour in the chicken broth and stir to combine.
  13. Add the dried thyme and ground cinnamon to the skillet.
  14. Season with additional salt and black pepper to taste.
  15. Return the cooked chicken to the skillet.
  16. Stir in the chopped walnuts.
  17. Drizzle the honey and lemon juice over the mixture.
  18. Stir well to combine all ingredients.
  19. Simmer the mixture for about 5 minutes until slightly thickened.
  20. Remove from heat and serve warm.
