Ingredients
- 1 pound (454 g) chicken breasts (about 450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 teaspoon (5 ml) salt (5 grams)
- 1/2 teaspoon (3 ml) black pepper (1.5 grams)
- 1 teaspoon (5 ml) dried thyme (1 gram)
- 2 cloves garlic, minced
- 1 cup (240 ml) farro (about 200 grams)
- 2 cups (480 ml) chicken broth (480 milliliters)
- 2 medium apples, cored and sliced
- 1 small onion, thinly sliced
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, black pepper, and dried thyme.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and sear for 4-5 minutes on each side until browned.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic for 1 minute.
- Add the thinly sliced onion to the skillet and cook for 3-4 minutes until translucent.
- Stir in the farro and cook for 1-2 minutes to lightly toast the grains.
- Pour in the chicken broth and bring to a simmer.
- Nestle the chicken breasts back into the skillet among the farro and onions.
- Scatter the sliced apples around the chicken and drizzle with lemon juice.
- Transfer the skillet to the preheated oven.
- Bake for 25-30 minutes until the chicken is cooked through and the farro is tender.
- Remove from the oven and let it rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
