Ingredients

  • Apple, 1 large, diced
  • Feta cheese, crumbled, 1/2 cup (120 ml) (75 grams)
  • Breadcrumbs, 1/2 cup (120 ml) (60 grams)
  • Egg, 1 large
  • Garlic, minced, 2 cloves
  • Onion, finely chopped, 1 small
  • Salt, 1 teaspoon (5 ml) (6 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Parsley, fresh, chopped, 1/4 cup (60 ml) (15 grams)
  • Rice or quinoa, cooked, 2 cups (480 ml) (370 grams)
  • Cucumber, sliced, 1 large


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground turkey, spinach, diced apple, feta cheese, breadcrumbs, egg, minced garlic, chopped onion, salt, and black pepper.
  3. Mix the ingredients thoroughly until well combined.
  4. Shape the mixture into small meatballs, about 1 inch in diameter.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  6. Add the meatballs in batches and brown them on all sides, about 5 minutes.
  7. Transfer browned meatballs to a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, or until cooked through.
  9. While meatballs are baking, in a small bowl, whisk together the remaining olive oil and lemon juice.
  10. In a serving bowl, layer the cooked rice or quinoa.
  11. Arrange the sliced cucumber around the edges of the bowl.
