Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground turkey, spinach, diced apple, feta cheese, breadcrumbs, egg, minced garlic, chopped onion, salt, and black pepper.
- Mix the ingredients thoroughly until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the meatballs in batches and brown them on all sides, about 5 minutes.
- Transfer browned meatballs to a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until cooked through.
- While meatballs are baking, in a small bowl, whisk together the remaining olive oil and lemon juice.
- In a serving bowl, layer the cooked rice or quinoa.
- Arrange the sliced cucumber around the edges of the bowl.
- Place the cooked meatballs on top of the rice or quinoa.
- Drizzle the lemon olive oil dressing over the bowl.
- Sprinkle chopped parsley over everything as a garnish.
