Ingredients

  • Steel cut oats, 2 cups (480 ml)
  • Water, 4 cups (960 ml)
  • Milk (or plant-based milk), 2 cups (480 ml)
  • Apples, 2 large, diced
  • Pecans, 1 cup (120 g), chopped
  • Maple syrup, 1/4 cup (60 ml)
  • Ground cinnamon, 1 teaspoon (5 g)
  • Salt, 1/4 teaspoon (1.25 g)
  • Vanilla extract, 1 teaspoon (5 ml)
  • Brown sugar, 2 tablespoons (30 g) (optional)


Instructions

  1. In a large pot, bring 4 cups of water to a boil.
  2. Add 2 cups of steel cut oats and a pinch of salt to the boiling water.
  3. Reduce heat to low and simmer oats, stirring occasionally, for 15 minutes.
  4. Add 2 cups of milk and continue cooking for another 10 minutes, stirring occasionally.
  5. Stir in the diced apples, 1/4 cup maple syrup, and 1 teaspoon ground cinnamon.
  6. Cook for an additional 5-10 minutes until the oats and apples are tender.
  7. Remove pot from heat and stir in 1 teaspoon vanilla extract.
  8. Divide the oatmeal evenly into meal prep containers.
  9. Top each portion with chopped pecans and, if desired, sprinkle with brown sugar.
  10. Allow to cool before sealing containers and storing in the refrigerator.
