  • 1/2 teaspoon (1 g) onion powder
  • 1/2 cup (50 g) pecans, chopped
  • 1 medium apple, diced
  • 1/4 cup (60 g) mayonnaise
  • 2 tablespoons (30 g) plain yogurt
  • 1 tablespoon (15 ml) lemon juice
  • 1 tablespoon (15 g) honey
  • 1 teaspoon (5 g) Dijon mustard
  • 8 large lettuce leaves, such as romaine or butter lettuce
  • 1/4 cup (15 g) fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts on a baking sheet.
  3. Drizzle the chicken with olive oil.
  4. Sprinkle salt, black pepper, garlic powder, and onion powder over the chicken.
  5. Rub the seasonings into the chicken evenly.
  6. Bake the chicken for 25-30 minutes or until fully cooked.
  7. Allow the chicken to cool slightly, then dice into small pieces.
  8. In a large bowl, combine the diced chicken, chopped pecans, and diced apple.
  9. In a separate small bowl, mix together the mayonnaise, plain yogurt, lemon juice, honey, and Dijon mustard.
  10. Pour the dressing over the chicken mixture.

  12. Lay out the lettuce leaves on a flat surface.
