Description

Discover how to make a delicious Apple Cranberry Spinach Quinoa Salad that is healthy and bursting with flavor. Perfect for a nutritious meal or side dish!

Ingredients

  • 1/4 cup (60 ml) quinoa
  • 1/2 cup (120 ml) vegetable stock
  • 2 cups (480 ml) fresh spinach
  • 1 apple
  • 12 almonds
  • 2 tablespoons (30 ml) unsweetened dried cranberries
  • 2 tablespoons (30 ml) flax seeds
  • Juice from 1/2 lemon

Instructions

  1. Pour the quinoa and vegetable stock into a small pot and set it over high heat. Once it starts boiling, cover the pot with a lid, lower the heat to a simmer, and let it cook for 20 minutes until the liquid is fully absorbed and the quinoa turns fluffy.
  2. While the quinoa is on the stove, coarsely chop the spinach, apple, almonds, and dried cranberries, and transfer them to a large bowl suitable for salad.
  3. Once the quinoa is ready, add it to the bowl with the other ingredients and scatter the flax seeds and lemon juice over the top.
  4. Mix all the components together well and serve.

Notes

  • Toast the almonds in a dry skillet before chopping to enhance their flavor and crunchiness.
  • Experiment with different apple varieties for a mix of sweetness and acidity in the salad.
  • Add a sprinkle of salt and pepper to enhance the flavor of the dish.
