Ingredients
- 1/3 cup (80 ml) apple cider vinegar
- 1/3 cup (80 ml) vegetable oil
- 1 small clove garlic, grated
- 2 tsp (10 ml). kosher salt
- 1 tsp (5 ml). Dijon mustard
- 1 tsp (5 ml). freshly ground black pepper
- 1 tsp (5 ml). pure maple syrup or honey
- 2 lb. (900 g) Brussels sprouts, trimmed, shaved (about 8 cups)
- 1 Honeycrisp apple, cored, thinly sliced
- 2 oz. (57 g) aged cheddar cheese, shredded
- 1/4 cup (60 ml) dried cranberries
- 1/4 cup (60 ml) pine nuts, toasted
Instructions
- In a medium-sized mixing bowl, combine vinegar, oil, garlic, salt, mustard, pepper, and syrup by whisking them together.
- Add the Brussels sprouts to the mixture and toss them until they are well coated.
- Allow the Brussels sprouts to marinate, stirring occasionally, for a minimum of 20 minutes and up to 4 hours.
- When you are ready to serve, gently mix in the apples, cheese, cranberries, and pine nuts.
Notes
- Let the Brussels sprouts marinate for at least 1 hour for a more intense flavor.
- Toasting pine nuts adds a delightful nutty crunch to the salad.
- Choose a sharp aged cheddar cheese for a bolder taste that complements the sweetness of the apples and cranberries.
