Ingredients

  • 1/2 cup (120 ml) unsweetened almond milk or other non-dairy milk
  • 2 tbsp (30 g) chia seeds
  • 2 tsp (10 ml) pure maple syrup
  • 1/4 tsp (1.25 ml) vanilla extract
  • 1/4 tsp (1.25 ml) ground cinnamon
  • 1/2 cup (75 g) diced apple, divided
  • 1 tbsp (15 g) chopped toasted pecans, divided


Instructions

  1. Combine the almond milk, chia seeds, maple syrup, vanilla extract, and cinnamon in a small bowl, mixing thoroughly. Place a lid on the bowl and chill in the refrigerator for at least 8 hours, up to a maximum of 3 days.
  2. Once ready to enjoy, mix the pudding again to ensure even consistency. Transfer approximately half of the mixture to a serving dish and garnish with half of the chopped apple and pecans. Pour the remaining pudding on top and finish by adding the rest of the apple and pecans as a garnish.
