Ingredients
- 1/2 cup (120 ml) unsweetened almond milk or other non-dairy milk
- 2 tbsp (30 g) chia seeds
- 2 tsp (10 ml) pure maple syrup
- 1/4 tsp (1.25 ml) vanilla extract
- 1/4 tsp (1.25 ml) ground cinnamon
- 1/2 cup (75 g) diced apple, divided
- 1 tbsp (15 g) chopped toasted pecans, divided
Instructions
- Combine the almond milk, chia seeds, maple syrup, vanilla extract, and cinnamon in a small bowl, mixing thoroughly. Place a lid on the bowl and chill in the refrigerator for at least 8 hours, up to a maximum of 3 days.
- Once ready to enjoy, mix the pudding again to ensure even consistency. Transfer approximately half of the mixture to a serving dish and garnish with half of the chopped apple and pecans. Pour the remaining pudding on top and finish by adding the rest of the apple and pecans as a garnish.
Notes
- Try substituting diced ripe pear or mashed banana for added sweetness instead of using apple.
- Experiment with walnuts or almonds for a unique flavor and texture variation.
- Enhance the cinnamon flavor by sprinkling a little extra on top before serving, or drizzle more maple syrup for a sweeter taste if desired.
