Ingredients

  • – 1.5 pounds boneless, skinless chicken thighs (680 g), about 6 chicken thighs
  • – 1 teaspoon (5 ml) dried thyme
  • – 1/2 teaspoon (3 ml) onion powder
  • – 1/2 teaspoon (3 ml) garlic powder
  • – 1/2 teaspoon (3 ml) paprika
  • – salt and freshly ground pepper, to taste
  • – 4 cloves garlic, minced
  • – 1 cup (240 ml) apple cider
  • – 1 tablespoon (15 ml) dijon mustard
  • – 1 fresh rosemary sprig or fresh thyme sprig
  • – 1 tablespoon (15 ml) butter

Instructions

  1. Warm olive oil in a 12-inch pan on medium heat.
  2. Meanwhile, in a small bowl, mix together dried thyme, onion powder, garlic powder, paprika, salt, and pepper.
  3. Rub the seasoning mixture over the chicken thighs.
  4. Place the chicken in the heated oil and sear for 5 minutes, until they achieve a golden color.
  5. Turn the chicken over and continue cooking for an additional 6 to 8 minutes, ensuring they reach an internal temperature of 165°F.
  6. Once cooked, take the chicken out of the pan and set it aside.
  7. Adjust the heat to medium-high under the skillet.
  8. Introduce minced garlic and sauté for about 20 seconds until it releases its aroma.
  9. Gradually add apple cider to the skillet.
  10. Incorporate dijon mustard, whisking thoroughly to blend.
  11. Place a rosemary or thyme sprig into the mixture.
  12. Let the sauce simmer for 8 minutes to thicken.
  13. Gently mix in the butter until it fully dissolves.
  14. Sample the sauce and season with additional salt and pepper if needed.
  15. Return the chicken thighs to the pan for another 2 minutes to warm them through.
  16. Take the skillet off the heat.
  17. Sprinkle with parsley before serving.

Notes

  • Marinate chicken thighs in seasoning mix for 30 minutes before cooking for a richer flavor.
  • Deglaze pan with chicken broth to enhance the sauce after cooking.
  • Add a squeeze of lemon juice at the end for a tangier sauce.
