Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 4 chicken thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 cup apple cider (240 ml)
  • 1 cup chicken broth (240 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) dried rosemary
  • 2 tablespoons honey (30 ml)
  • 2 apples, cored and sliced
  • 2 tablespoons vegetable oil (30 ml)


Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season 4 chicken thighs with salt and black pepper to taste.
  3. Add the chicken to the skillet, skin-side down, and sear until golden brown, about 5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced onion and cook until softened, about 3-4 minutes.
  6. Add 2 minced garlic cloves and sauté for another 1 minute.
  7. Pour in 1 cup of apple cider and 1 cup of chicken broth, stirring to combine.
  8. Stir in 1 tablespoon of apple cider vinegar, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary.
  9. Add 2 tablespoons of honey and mix well.
  10. Return the chicken thighs to the skillet, skin-side up.
  11. Add the sliced apples around the chicken.
  12. Bring the mixture to a simmer, then reduce the heat to low.
  13. Cover the skillet and let it cook for 25-30 minutes, or until the chicken is cooked through.
  14. Remove the lid and increase the heat to medium-high.
  15. Stir in 2 tablespoons of butter and cook for an additional 5 minutes to thicken the sauce.
  16. Adjust seasoning with salt and pepper, if needed.
  17. Serve the chicken with the apples and onions, drizzling the sauce over the top.
