- Black pepper, to taste
- 1 large onion, thinly sliced
- 2 garlic cloves, minced
- 1 cup apple cider (240 ml)
- 1 cup chicken broth (240 ml)
- 1 tablespoon apple cider vinegar (15 ml)
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) dried rosemary
- 2 tablespoons honey (30 ml)
- 2 apples, cored and sliced
- 2 tablespoons vegetable oil (30 ml)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Season 4 chicken thighs with salt and black pepper to taste.
- Add the chicken to the skillet, skin-side down, and sear until golden brown, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion and cook until softened, about 3-4 minutes.
- Add 2 minced garlic cloves and sauté for another 1 minute.
- Pour in 1 cup of apple cider and 1 cup of chicken broth, stirring to combine.
- Stir in 1 tablespoon of apple cider vinegar, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary.
- Add 2 tablespoons of honey and mix well.
- Return the chicken thighs to the skillet, skin-side up.
- Add the sliced apples around the chicken.
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover the skillet and let it cook for 25-30 minutes, or until the chicken is cooked through.
- Remove the lid and increase the heat to medium-high.
- Stir in 2 tablespoons of butter and cook for an additional 5 minutes to thicken the sauce.
- Adjust seasoning with salt and pepper, if needed.
- Serve the chicken with the apples and onions, drizzling the sauce over the top.
Notes
- For a more robust flavor, opt for bone-in chicken thighs over boneless.
- Try using apple juice instead of apple cider for a sweeter profile.
- Enhance with a touch of red pepper flakes before serving for a hint of spice.
