Ingredients

  • 2 pounds beef tenderloin (about 900 grams)
  • 1 cup unsweetened applesauce (240 milliliters)
  • 1/2 cup apple cider vinegar (120 milliliters)
  • 1/4 cup brown sugar (55 grams)
  • 1 teaspoon ground cinnamon (2 grams)
  • 1/2 teaspoon ground cloves (1 gram)
  • 1 teaspoon ground ginger (2 grams)
  • 1 tablespoon vegetable oil (15 milliliters)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pat the beef tenderloin dry with paper towels.
  3. Season the beef with salt and black pepper on all sides.
  4. Heat the vegetable oil in a large oven-safe skillet over medium-high heat.
  5. Sear the beef in the skillet for 3-4 minutes on each side until browned.
  6. Remove the beef from the skillet and set aside.
  7. In a bowl, mix the applesauce, apple cider vinegar, brown sugar, ground cinnamon, ground cloves, and ground ginger.
  8. Pour the applesauce mixture into the skillet, stirring to combine with any browned bits.
  9. Return the beef to the skillet, coating it with the sauce.
  10. Transfer the skillet to the preheated oven.
  11. Roast the beef for 25-30 minutes or until it reaches an internal temperature of 145°F (63°C).
  12. Remove the skillet from the oven and let the beef rest for 5 minutes.
  13. Slice the beef tenderloin and serve with the apple butter sauce.

Notes

  • Enhance the sweetness of the sauce by adding extra brown sugar to the applesauce mixture.
  • Allow the cooked to rest before serving to improve tenderness and flavor.
  • Adjust the seasoning in the sauce to suit your taste, adding more cinnamon or ginger for a bolder taste.
