Ingredients

  • 20 long wooden skewers
  • 1 16 ounce (454 g) package cheese tortellini
  • 40 large olives Castelvetranos or kalamata
  • 40 plump cherry tomatoes
  • 40 thin slices beef salami
  • 40 thin slices turkey slices
  • 20 baby moz zarella balls
  • 20 cubes sharp provolone cheese
  • 40 pieces basil, torn
  • 20 pieces chopped artichoke hearts
  • 2 roasted red peppers seeds removed, chopped into small pieces
  • 1/2 cup (113 ml) olive oil
  • 3 Tablespoon s (42 ml) freshly squeezed lemon juice
  • 1/2 cup (120 ml) loosely packed fresh basil
  • 2 Tablespoon s (28 ml) apple cider vinegar
  • 1 Tablespoon (18 ml) honey
  • 2 cloves fresh garlic minced
  • 3/4 teaspoon (4 ml) salt
  • 1/2 teaspoon (3 ml) black pepper


Instructions

  1. Boil the tortellini following the instructions on the package; drain and rinse under cold water immediately. Mix with the dressing as explained below.
  2. Prepare the skewers by threading on the tortellini, olives, cherry tomatoes, meat slices, cheese, red peppers, basil, and artichoke hearts. Be creative and make them uniform or varied as you prefer! Place the skewers on a large platter and, if you like, pour a bit more of the vinaigrette on top.
  3. Put all dressing ingredients into a blender or food processor. Taste and modify the flavoring if necessary.
  4. In a big bowl, mix the tortellini and baby mozzarella balls with 1/3 cup of the dressing. Chill in the refrigerator for at least 15 minutes and for up to 4 hours. Follow the instructions above for use.
