Ingredients

  • 2 large zucchini
  • 1 tablespoon (15 ml) olive oil
  • 1/2 teaspoon (3 ml) salt or less if desired
  • 1/4 teaspoon (1 ml) red pepper flakes
  • 1/4 teaspoon (1 ml) ground black pepper
  • 1/3 cup (80 ml) to 1/2 cup (120 ml) grated cheese


Instructions

  1. Rinse the zucchini and dry them with a towel, then cut them into discs that are about half an inch thick. Avoid cutting them too thin, as they might become too soft, or too thick, as they might not cook through completely before the cheese browns.
  2. Put the zucchini slices in a large bowl and mix them with olive oil, salt, red pepper flakes, and black pepper until everything is evenly coated.
  3. Set the air fryer to 400°F and let it heat for 11 minutes. Once ready, arrange the zucchini slices in a single layer and distribute the grated cheese over them. Tip: Ensure the cheese is spread over each zucchini round.
  4. Cook until the tops achieve a golden brown color, which should take between 9 and 11 minutes. Serve immediately while hot!
