Ingredients
- 2 medium-sized summer squash (about 1 lb or 500g)
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) granulated garlic
- 1 teaspoon (5 ml) dried basil
- 1 teaspoon (5 ml) dried oregano
- salt (to taste)
- fresh cracked pepper (to taste)
- vegan parmesan
- fresh chopped herbs
Instructions
- Set your air fryer to 450°F (240°C) or its maximum temperature.
- Rinse the summer squash and remove the ends. Cut the squash into circular slices, each about ¼ to ½ inch thick.
- Combine the sliced squash with olive oil, granulated garlic, dried basil, dried oregano, salt, and pepper in a mixing bowl. Stir until well-coated.
- Place the seasoned squash slices into the air fryer basket, ensuring they are spread out and not overlapping.
- Cook for approximately 12 to 14 minutes, until they are golden yet retain some firmness.
- Pause the cooking around 8 minutes in to rearrange the squash for even cooking.
- Serve immediately, garnished with fresh herbs and a sprinkle of vegan parmesan.
