Ingredients

  • 2 medium-sized summer squash (about 1 lb or 500g)
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) granulated garlic
  • 1 teaspoon (5 ml) dried basil
  • 1 teaspoon (5 ml) dried oregano
  • salt (to taste)
  • fresh cracked pepper (to taste)
  • vegan parmesan
  • fresh chopped herbs


Instructions

  1. Set your air fryer to 450°F (240°C) or its maximum temperature.
  2. Rinse the summer squash and remove the ends. Cut the squash into circular slices, each about ¼ to ½ inch thick.
  3. Combine the sliced squash with olive oil, granulated garlic, dried basil, dried oregano, salt, and pepper in a mixing bowl. Stir until well-coated.
  4. Place the seasoned squash slices into the air fryer basket, ensuring they are spread out and not overlapping.
  5. Cook for approximately 12 to 14 minutes, until they are golden yet retain some firmness.
  6. Pause the cooking around 8 minutes in to rearrange the squash for even cooking.
  7. Serve immediately, garnished with fresh herbs and a sprinkle of vegan parmesan.
