Ingredients

  • 1 large zucchini (about 280 grams)
  • 8 ounces (227 g) feta cheese
  • 1 cup (240 ml) breadcrumbs (120 grams)
  • 1/2 cup (120 ml) all-purpose flour (65 grams)
  • 2 large eggs
  • 1 teaspoon (5 ml) garlic powder (2 grams)
  • 1 teaspoon (5 ml) onion powder (2 grams)
  • 1/2 teaspoon (3 ml) paprika (1 gram)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 grams)
  • Vegetable oil spray


Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Slice the zucchini into 1/4-inch thick rounds.
  3. Cut the halloumi cheese into similar-sized slices as the zucchini.
  4. In a shallow bowl, mix breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Place the flour in another shallow bowl.
  6. Beat the eggs in a third shallow bowl.
  7. Dip each zucchini and halloumi slice in flour, shaking off excess.
  8. Coat the floured slices in the beaten eggs.
  9. Dredge the slices in the breadcrumb mixture, pressing lightly to adhere.
  10. Spray the air fryer basket with olive oil spray.
  11. Arrange the coated slices in a single layer in the air fryer basket.
  12. Lightly spray the tops of the slices with olive oil spray.
  13. Air fry for 8-10 minutes or until golden brown and crispy, flipping halfway through.
  14. Remove from the air fryer and let cool slightly before serving.
