Ingredients

  • 2 (225g) boneless, skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/3 cup (40g) all-purpose flour
  • 2 large eggs
  • 1 cup (120g) panko bread crumbs
  • 1/4 cup (25g) finely grated alternative cheese
  • 1 teaspoon (5 ml) dried oregano
  • 1/2 teaspoon (3 ml) crushed red pepper flakes
  • 1/2 teaspoon (3 ml) garlic powder
  • 1 cup (240ml) tomato-based sauce
  • 1 cup (120g) shredded alternative cheese
  • Chopped fresh parsley, for serving


Instructions

  1. Slice each chicken breast in half horizontally to create 4 thin pieces; sprinkle both sides with kosher salt and freshly ground pepper.
  2. Place the flour in a shallow dish and season it with a generous amount of salt and pepper. In a separate shallow dish, whisk the eggs. In a third shallow dish, mix together the panko, finely grated alternative cheese, oregano, red pepper flakes, and garlic powder.
  3. Individually, coat each piece of chicken in the flour, shaking off the extra. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, press the chicken into the panko blend, ensuring thorough coverage on both sides.
  4. If needed, work in batches to arrange the chicken in a single layer in the air fryer basket. Cook at 400°F, flipping once, until thoroughly cooked, approximately 5 minutes per side. Add tomato-based sauce and shredded alternative cheese on top of the chicken. Continue cooking at 400°F until the cheese is melted and turns golden, about 3 more minutes.
  5. Serve the chicken on plates and sprinkle with chopped fresh parsley.
