Ingredients

  • 2 boneless, skinless chicken breasts (about 450 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon paprika (5 g)
  • 1 teaspoon dried oregano (5 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (2.5 g)
  • 1 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes (about 150 g)


Instructions

  1. Preheat the air fryer to 380°F (193°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper.
  4. Rub the spice mixture evenly over both sides of the chicken breasts.
  5. Place the chicken breasts in the air fryer basket.
  6. Air fry the chicken for 10 minutes.
  7. While the chicken is cooking, prepare the vegetables.
  8. In a large bowl, combine zucchini, red bell pepper, yellow bell pepper, and cherry tomatoes.
  9. Drizzle the remaining olive oil over the vegetables and toss to coat.
  10. After 10 minutes, flip the chicken breasts.
  11. Add the prepared vegetables to the air fryer basket around the chicken.
  12. Air fry for an additional 10-12 minutes, until chicken is cooked through and vegetables are tender.
  13. Check that the internal temperature of the chicken reaches 165°F (74°C).
  14. Remove the chicken and vegetables from the air fryer.
  15. Let the chicken rest for a few minutes before slicing.
  16. Serve the chicken with the roasted vegetables.

  • Marinate the chicken breasts in the spice mixture for 30 minutes before air frying for enhanced flavor.
