Ingredients
- 2 boneless, skinless chicken breasts (about 450 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon onion powder (5 g)
- 1 teaspoon paprika (5 g)
- 1 teaspoon dried oregano (5 g)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (2.5 g)
- 1 medium zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup cherry tomatoes (about 150 g)
Instructions
- Preheat the air fryer to 380°F (193°C).
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the chicken breasts.
- Place the chicken breasts in the air fryer basket.
- Air fry the chicken for 10 minutes.
- While the chicken is cooking, prepare the vegetables.
- In a large bowl, combine zucchini, red bell pepper, yellow bell pepper, and cherry tomatoes.
- Drizzle the remaining olive oil over the vegetables and toss to coat.
- After 10 minutes, flip the chicken breasts.
- Add the prepared vegetables to the air fryer basket around the chicken.
- Air fry for an additional 10-12 minutes, until chicken is cooked through and vegetables are tender.
- Check that the internal temperature of the chicken reaches 165°F (74°C).
- Remove the chicken and vegetables from the air fryer.
- Let the chicken rest for a few minutes before slicing.
- Serve the chicken with the roasted vegetables.
