Ingredients

  • 2 medium-sized summer squash (about 1 pound or 500g)
  • 1 Tablespoon (15 ml) olive oil (optional )
  • 1 teaspoon (5 ml) granulated garlic
  • 1 teaspoon (5 ml) dried basil
  • 1 teaspoon (5 ml) dried oregano
  • Salt (to taste)
  • Fresh cracked pepper (to taste)
  • Vegan parmesan
  • Fresh chopped herbs


Instructions

  1. Set your air fryer to its highest temperature, either 450F or 240C.
  2. Rinse the summer squash and remove the ends. Cut the squash into slices that are ¼ to ½ inch thick.
  3. Transfer the sliced squash into a bowl. Drizzle with olive oil and sprinkle with seasonings. Stir to coat evenly.
  4. Arrange the squash slices in the air fryer basket, ensuring they are spread out and not overlapping.
  5. Cook them for approximately 12 to 14 minutes, or until they are golden brown yet still firm to the touch.
  6. Pause the cooking around the 8-minute mark to shuffle the squash for even cooking.
  7. Serve immediately, garnished with fresh herbs and a sprinkle of vegan parmesan.
