Ingredients
- 8 slices beef bacon
- 1 cup chopped onion (240 ml)
- 4 cups cubed potatoes (600 g)
- 2 (305 g each) cans condensed cream of chicken soup
- 590 ml milk
- salt to taste
- ground black pepper to taste
- 1 teaspoon (5 ml) dried dill weed
Instructions
- In a sizable pot, fry the beef bacon until it becomes crisp. Take out the bacon and set it aside. Keep only about 3 tablespoons of the bacon grease in the pot.
- Sauté the onions in the bacon grease over medium heat until they turn golden brown.
- Add the potato cubes to the pot and pour in enough water to cover them completely. Cover the pot and cook until the potatoes are soft, which should take about 15 to 20 minutes.
- Combine the condensed cream of chicken soup with milk until it becomes a smooth mixture, then pour it into the pot with the potatoes. Heat the mixture gently without bringing it to a boil. Season with salt and black pepper to your liking, then mix in the dried dill weed.
- Break the bacon into pieces; either mix it into the soup just before serving or use it as a topping for garnish.

- For added flavor, consider using smoked beef bacon in place of regular beef bacon.
