Ingredients

  • 2 cups (292 g) + 1/4 cup (37 g) sugar free milk chocolate chips
  • 4 large (142 g) egg whites brought to room temperature


Instructions

  1. Set your oven to a temperature of 350°F (177°C) and prepare an 8 x 8 inch baking dish by lining it with parchment paper.
  2. In a large bowl that can go in the microwave, place 2 cups of chocolate chips. Heat them in the microwave in 15-30 second bursts, stirring with a spatula after each interval until the chocolate is fully melted and smooth. Alternatively, you can melt the chocolate on the stove using a double boiler.
  3. Introduce the egg whites into the melted chocolate. Whisk them in until the mixture becomes smooth and the egg whites are fully mixed with the chocolate.
  4. Transfer the batter into the lined pan. Scatter the remaining 1/4 cup of chocolate chips over the top of the batter and gently press them in.
  5. Place in the oven and bake for approximately 15-18 minutes or until they are finished. The brownies should rise, and while the top should appear baked, the center should remain soft but not runny.
  6. Allow the brownies to cool for about 15-30 minutes to firm up before slicing. They are at their best when eaten warm. Once completely cooled, the sugar-free chocolate will cause the brownies to become firm. Reheating them in the microwave or oven will return them to their original texture from when they were freshly baked.
