Ingredients
- 1/2 cup (120 ml) packed spinach, steamed, squeezed, drained and chopped
- 1 tablespoon (15 ml) herbs (a combination of mint, dill and parsley), chopped
- 1 green onion, sliced
- 2 tablespoons (30 ml) beef feta, crumbled
- 2 (8 inch) tortillas
- 1 cup (240 ml) shredded kasseri cheese (or mozzarella)
Instructions
- Combine the spinach, chopped herbs, sliced green onion, and crumbled feta in a mixing bowl.
- Warm a skillet over medium heat; place a tortilla in the skillet, layer half of the shredded cheese on the tortilla, then add the prepared mixture, top with the rest of the cheese, and cover with the second tortilla.
- Cook the quesadilla until it achieves a golden-brown color on both sides and the cheese has melted, approximately 2-4 minutes per side.
