Ingredients
- 4 small zucchini (about 1 1/2 pounds (680 g)), quartered lengthwise
- 1 tablespoon (15 ml) olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon (3 ml) dried basil
- 1/2 teaspoon (3 ml) seasoned salt
- 1/2 teaspoon (3 ml) dried Italian seasoning
- 1/8 teaspoon (1 ml) salt
Instructions
- Set your oven to 450°F and adjust the rack to the center position. Lightly coat a large baking sheet with cooking spray. On the baking sheet, combine the zucchini pieces, minced garlic, and olive oil. Mix them well. Arrange the zucchini so they are spaced out with one cut side facing down.
- Place in the oven for 8 minutes, then turn the zucchini to rest on the other cut side. Continue baking for another 8 minutes, or until they achieve a golden hue on the sides. While the zucchini is roasting, blend the spices together in a small dish.
- Take the roasted zucchini out of the oven and sprinkle the mixed spices over them. Use a spatula to ensure the seasonings are evenly distributed. Serve immediately while hot.
