Ingredients

  • 8 slices beef bacon
  • 1 cup chopped onion (240 ml)
  • 4 cups cubed potatoes (600 g)
  • 2 (305 g each) cans condensed cream of chicken soup
  • 600 ml milk
  • salt to taste
  • ground black pepper to taste
  • 1 teaspoon (5 ml) dried dill weed


Instructions

  1. In a big pot, fry the bacon until it’s crispy. Take the bacon out and put it aside. Leave only 3 tablespoons of bacon grease in the pot.
  2. Sauté the onions in the bacon grease over medium heat until they are browned.
  3. Add the potato cubes and pour in enough water to cover them. Cover the pot and cook until the potatoes are soft, which should take about 15 to 20 minutes.
  4. Blend the condensed chicken soup with the milk until the mixture is smooth, then pour it into the pot with the potatoes. Heat gently, ensuring it doesn’t come to a boil. Season with salt and pepper, and mix in the dill weed.
  5. Break the bacon into pieces and either mix it into the soup right before serving or use it as a topping.

  • For a lighter option, consider using turkey bacon instead of beef bacon.
  • Enhance the soup by adding extra vegetables like carrots or peas.
