  • Onion powder, 1 teaspoon (5 ml) (2.5 grams)
  • Dried oregano, 1 teaspoon (5 ml) (2.5 grams)
  • Fresh parsley, 2 tablespoons (30 ml), chopped (8 grams)
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Coconut cream, 1 cup (240 ml) (240 milliliters)
  • Vegan cheese, grated, 1/2 cup (120 ml) (50 grams)
  • Vegetable oil, 2 tablespoons (30 ml) (28 grams)
  • Vegetable broth, 1 cup (240 ml) (240 milliliters)
  • Spinach, fresh, 2 cups (480 ml) (60 grams)
  • Mushrooms, sliced, 1 cup (240 ml) (75 grams)
  • Bell peppers, sliced, 1 cup (240 ml) (150 grams)
  • Broccoli florets, 1 cup (240 ml) (90 grams)
  • Zucchini, sliced, 1 cup (240 ml) (120 grams)
  • Cauliflower rice, 2 cups (480 ml) (300 grams)
  • Avocado, 1, sliced
  • Coconut milk, 1 cup (240 ml) (240 milliliters)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice chicken breast into thin fillets.
  3. Mix olive oil, garlic, salt, black pepper, paprika, onion powder, and oregano in a bowl.
  4. Coat chicken fillets with the marinade mixture.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  6. Sear chicken fillets for 3-4 minutes on each side until golden brown.
  7. Transfer seared chicken to a baking dish.
  8. In the same skillet, melt butter over medium heat.
  9. Add sliced mushrooms and bell peppers, sauté for 5 minutes.
  10. Add spinach and cook until wilted, about 2 minutes.
