A delightful sheet pan meal featuring smoky kielbasa and vibrant vegetables that is easy to prepare and full of flavor.
Ingredients
- 1 pound smoky kielbasa, sliced
- 1 medium butternut squash, peeled and cubed
- 2 bell peppers, chopped (use your favorite colors)
- 1 medium zucchini, sliced
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon garlic salt
- ½ teaspoon ground black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the kielbasa and vegetables into bite-sized pieces.
- In a large bowl, toss the kielbasa and veggies with olive oil, thyme, smoked paprika, garlic salt, and black pepper.
- Spread the mixture evenly on a sheet pan.
- Bake for 25 minutes or until the veggies are tender and slightly caramelized.
- Serve warm.
Notes
For a different flavor, consider adding Italian herbs or a splash of lemon juice. Leftovers taste even better the next day.
