Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon cold water
- 1 cup mango puree (fresh or canned)
- 3/4 cup granulated sugar
- 3 eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/4 cup unsalted butter, melted
- Whipped cream or fresh fruit (for topping)
Instructions
- In a bowl, combine flour, powdered sugar, and salt.
- Add chilled butter, mixing until it resembles coarse crumbs.
- Stir in egg yolk and cold water until the dough comes together.
- Press the dough into a tart pan and poke holes in the bottom.
- Bake for 15-20 minutes until golden.
- In a saucepan, combine mango puree, sugar, eggs, lime juice, and zest.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat and stir in melted butter.
- Pour mango curd into the baked crust, smoothing the top.
- Bake for another 15 minutes.
- Let cool completely, then top with whipped cream or fresh fruit before serving.
Notes
For a richer flavor, use fresh mango puree. If your tart crust appears too crumbly, add an extra teaspoon of cold water to bind it together.
