A delightful tropical dessert that transforms simple ingredients into a vibrant and flavorful tart, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 tablespoon cold water
  • 1 cup mango puree (fresh or canned)
  • 3/4 cup granulated sugar
  • 3 eggs
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 cup unsalted butter, melted
  • Whipped cream or fresh fruit (for topping)


Instructions

  1. In a bowl, combine flour, powdered sugar, and salt.
  2. Add chilled butter, mixing until it resembles coarse crumbs.
  3. Stir in egg yolk and cold water until the dough comes together.
  4. Press the dough into a tart pan and poke holes in the bottom.
  5. Bake for 15-20 minutes until golden.
  6. In a saucepan, combine mango puree, sugar, eggs, lime juice, and zest.
  7. Cook over medium heat, stirring constantly until thickened.
  8. Remove from heat and stir in melted butter.
  9. Pour mango curd into the baked crust, smoothing the top.
  10. Bake for another 15 minutes.
  11. Let cool completely, then top with whipped cream or fresh fruit before serving.

Notes

For a richer flavor, use fresh mango puree. If your tart crust appears too crumbly, add an extra teaspoon of cold water to bind it together.
